Appetizers

The concept of small snack meals is common to many cultures, including Russia, where appetizers are known as Zakuski, which in Russian literally means “little bites”.  Zakuski might include various pickles (pickled cucumber being a favorite), salads, fish, caviar and cured meat and sausage. Sometimes referred to as “starters” in America, in Russia Zakuski can also be served after a meal or pretty much at any time of day as a light snack.  Herring with a vinegar and oil dressing is the best-known appetizer, and it almost always makes an appearance during both holiday and everyday meals.

 

  

Herring in Mustard Sauce

 

 

 

 Ingredients:

 

1 lb herring fillets Matties

(available at Russian stores)

1 white sweet onion

3 Tbls mustard

1/2 Tbs sugar

2 Tbs olive oil or sunflower oil

5 Tbs water

pomegranate seeds

spring onions

Cut herring fillets into strips, and place on an oval herring dish.

Stir mustard with sugar until sugar dissolves.

Add oil and stir until an even consistency.

Add warm water and mix well.

Pour the mustard sauce over the herring.

Let sit for about 15-20 minutes.

Peel a sweet onion, and cut into half-rings.

Cover the herring with onions and sprinkle with pomegranate seeds.

Decorate with spring onions.

Serve with rye bread.
